I'm Tread'n, Tapp'n, ...and hopefully Bike'n!

We had a Blast with SUZANNE™ !

My SUZANNE™ Open House was so much fun, ...it truly was a blast!

Here are some of my displays ...






I forgot to take photo's of the food display's in the kitchen, ..I had three mini crockpots and a beverage bar as well as some other desserts! And, I had two other areas of food product displays!

I really wish all of you could have been there, ...we really had a lot of fun.

I ended up having a ton of sales and some bookings and a few of my guests are interested in becoming Consultants! Yay!!! I'm so excited, ...I'm am ready to have a TEAM of my own and can't wait to pamper and spoil my girls with the SUZANNE™ products!

Kenny and I brainstormed and came up with the name "NeverEnding Somers" for my Team! I love it, ...what's better than the feeling of warm air, gentle breezes and the soft floral scents that envelope you on a Summer afteroon, it fills you with happiness and leaves you with the feeling of not wanting it to end! And, of course subsituting Summers with Somers is so fitting, ...Suzanne never ceases to amaze me on how her compassion and dedication to helping others to live healthy and beautiful lives comes through in all of her hand-picked products!

Dreamy Coconut Squares



Dreamy Coconut Squares
(Makes 24 squares)

Crust Ingredients:
1 cup Vanilla Whey Powder
1/2 cup whey-low (sugar substitute)
6 tbl. butter (softened)
1 tsp. coconut extract

Procedure:
1.) Preheat oven to 350 degrees.
2.) Blend all ingredients together, press in bottom of 11x7 greased baking dish.
3.) Bake for 15 minutes, remove from oven and allow to cool for about 5 minutes while preparing filling.


Filling Ingredients:
8 oz. cream cheese (softened-room temperature)
1/2 cup sour cream
1 cup whey-low (sugar substitute)
3 eggs
1 tbl. lemon juice (fresh squeezed)
2 tsp. coconut extract


Procedure:
1.) Put all ingredients in a mixing bowl, stir to combine removing any lumps.
2.) Pour over cooled crust and return to 350 degree oven for about 35 minutes or until crust is golden brown and filling is set.
3.) Remove from oven, allow to cool completely.
4.) Once cooled, cover with plastic wrap and refrigerate over-night, then serve!

Betsy's BabyCakes - Vanilla Protein Pancakes

Betsy's BabyCakes - Vanilla Protein Pancakes
(Makes 12 triangle shaped pancakes)

Ingredients:
6 oz. cream cheese
1 egg
2 scoops EAS Vanilla Whey Protein Powder
1 tsp. baking powder
1/4 cup cream
1 tsp. vanilla extract
1 tbl. lemon juice (fresh squeezed)
1 tbl. whey-low (sugar substitute)

Procedure:
1.) Blend all ingredients together in a mixing bowl.
2.) Pour batter into a greased sandwich maker.
3.) Let cook for 2-3 minutes, lift with spatula and serve topped with orange cream filling and sugar-free maple syrup.



Additional recipe:

Orange Cream Filling

Ingredients:
2 oz. cream cheese
2 tbl. whey-low powder (powdered sugar substitute)
1 tsp. orange extract
2 tsp. cream

Procedure:
1.) Put all ingredients in a small bowl.
2.) Heat in microwave oven on medium heat for 1-2 minutes.
3.) Stir to combine, serve.

Betsy's Loaded Chicken Breasts



Ingredients:

4 large chicken breasts
1½ cups water
1 stick butter (softened)
8 ounces sour cream
12 ounces shredded cheddar cheese
1 tablespoon chives
12 strips bacon (cooked/crumbled)
salt
pepper





Procedure:
1.) In a large skillet, cook chicken breasts in water for 8-10 minutes or until no longer pink inside.


2.) Remove chicken breasts, cut into bite size pieces, place in large serving bowl. Add butter, sour cream, 8 ounces cheddar cheese, bacon, salt & pepper to taste.


3.) Stir to combine, top with remaining cheddar cheese and chives, microwave on high for 2-3 minutes and serve immediately.

Celebrating ...7 Years of Somersizing!












Today is my 7th Anniversary of Somersizing!

I began Somersizing on March 5, 2001. My starting weight was 160 lbs. and in 3 months I lost 30 lbs. and achieved my goal weight of 130 lbs.

I maintained this weight with only slight fluctuations for four and a half years.

Then, unexpectedly in 2006 my husband became ill and I was unable to focus on myself. The next year proved to be a very stressful and emotional period, I was lost in a sea of emotions and continued to not eat healthy food choices and had lost interest in exercising all together.

By the Spring of 2007, my husband's body began responding to the medications and his health finally began to improve.

After a couple more months, I was able to feel some of the emotional weight being lifted off of me. So, on July 14, 2007 I felt that I was able to shift my focus back on me.

On July 14, 2007, I stepped on the scale and weighed in at 182 lbs. I was saddened but not surprised to have gained 52 lbs., this had been such a difficult time and I was aware that my old comfort food friends were taking advantage of me.

So, on this day, I whole-heartedly choose to follow the Level 1 guidelines and began exercising again. It didn't take long for me to feel the benefits of Somersizing, ...it was a feeling of coming home again.

My goal is still the same, to find my way back to 130 lbs.. As of today, I have lost 28 lbs. and have 24 lbs. to loose to reach my goal weight.

However, something is very different this time. Coming through a long, emotional experience does change a person. I've learned to really appreciate life and not to take our health for granted.

As for reaching my goal weight, I'm not in any hurry, I know that the road that I am on will lead me to where I want to go, ...I've always believed in Somersizing and I know in my heart that this is the perfect lifestyle and it is simply the best way to eat for me!

Halfway ...there!

27 lbs. down and 25 lbs. to go!

Okay, so I have officially reached the halfway mark. Yes, it's taking me longer to reach my goal, but I'm older now, er I mean more mature (LoL) and this time I am taking things a bit slower, ...I'm really savoring the moments and enjoying the journey.

My new short-term goal is to loose 20 lbs. by my birthday, May 17th! That's three months from now, which is doable, ...just need to remain focused and continue eating Level 1 food choices and working out on a daily basis!

I'm on my "weigh" !!!

Up 1 lb. ...no wait I'm down 3 lbs.

Yep, ...I was a little discouraged to find that I had gained 1 lb. a couple of weeks ago. Then looking over my progress I realized that it was the first time I had actually gained since returning to this WOE, ...and it was only 1 lb. so no reason to feel blue over that.

I hopped on the scale the following week and guess what? Apparently one or both of my cats have taken a liking to the scale (again) as their choice of places to snuggle up for a nap during the day because nothing, no reading, ...the batteries were completely dead.

I bought some new batteries mid-week but decided to wait until Monday for my official weigh-in, ...guess I was dreading seeing the 1 lb. again or worse yet more! When Monday finally came, I hopped on the scale and to my surprise I had lost not only that pesky pound but two of his friends! Yep, I'm down three pounds this week.

Okay, now you know me, ...somewhat skeptical I had to get on and off and weigh again. Then again, and move the scale around the kitchen floor again and again, ...and finally after 8 times I decided it must be so, ...so I am thrilled to report that I am officially at 155 lbs. ! Woo Hoo!!!!

Weighing in on my Progress 01/14/2007

I've been on a plateau for a couple of weeks now, so I'm not surprised that the scale is sticking. It's okay though, I'm not all all discouraged by it, I know it will begin to move again.

And, ...today when I measured, I made some progress, I discovered that I have lost 3 more inches!

So, all that extra Steppin I've been doing is definately working!

I've been hanging out in the BARS!

No, not the bars where social gatherings occur, ...I'm talking Protein Bars!

When you work out on a daily basis building muscle, you need to make sure that you are getting enough protein to help build and maintain muscle mass.

So, I've been experimenting with different types of protein bars. Here is what I have tried so far ...

Think Thin Protein Bars - they are available in chocolate fudge, brownie crunch, chocolate mudslide, dark chocolate, white chocolate chip, crunchy peanut butter, and smooth peanut butter. Also, for a limited time in support of breast cancer they are offering ...white chocolate raspberry, peanut butter caramel, blueberry dark chocolate, and lemon burst.

Zero Imact Protein Bars - pumpkin supreme, chocolate peanut butter. This bar is really different than most I've tried, ...kinda grows on you. LoL I prefer the pumpkin supreme flavor and really the texture, it's like eating fudge. It's actually a protein meal replacement bar so don't overdue it when eating these.

EAS Myoplex Carb Control Protein Bars - chocolate chip brownie, chocolate peanut butter, and cookies and cream. I really didn't care for the two chocolate flavors, but did enjoy the cookies and cream flavor. Makes me feel like I'm eating a candy bar though! LoL

Balance (Carb Well) Protein Bars - chocolate fudge, chocolate peanut butter, caramel n chocolate.

Make sure when choosing a Protein Bar that you read the ingredients list. Depending on what is included will determine whether it is a Level 1, Almost Level 1 or Level 2 food choice.

It's important that while loosing weight you choose a bar with legal ingredients for Level 1.

Gotta Have this ...

Okay, I am head over heels (um, emphasis on heels) in love with this Treadmill and I just gotta have it! LoL

I've wanted one forever, but honestly, we just don't have the space to put it in so that it will be easily accessible. I can make room in the basement, but I know if I put in down there it will only collect dust, ...so it definately has to go in one of our everyday living spaces.

You know me, things have to be functional as well as decorative, so I've really been racking my brain about re-arranging things to make this work. And, I think I've come up with a plan, ...now I just have to convince Kenny and that has been the hardest part! LoL

He's kinda on the fence about this one, ...really the only negative thing that he has come up with is the space issue. And, yes I agree that has been the biggest hurdle when it comes to choosing a treadmill.

But, ...this particular one is available from HSN, currently it has FREE Shipping and Handling and they are offering 4 flexpays, ...so what's not to love about that? LoL

I know, I know, nothing, ...I love all the features and HSN is really making it so affordable, so why not?
