Happy 4th of July!
It is a day of celebration, ...but don't forget it's not an excuse to stray from your eating and exercise program.
I ran 1 mile in 10.5 today!!!! Then 30 minutes of strength training - continued my day with great healthy eating choices!!!!
This girls on fire - not going let all this hard work go to waist, I see huge results coming my way!

Boot Camp - HOOAH!!!
Just have to post about my newest passion!!!
It's called, ...Major Fitness Boot Camp!
So what is it you ask?
MAJOR FITNESS Boot Camps is a comprehensive physical conditioning program for men and women, that combines the expertise and benefits of one-on-one personal fitness training with the camaraderie and motivation of working in a group with others just like you. We do fitness the old fashioned way: with sit-ups, push-ups, pull-ups, running, and a whole lot of sweat.

Finding my way around the circle!
Yes, it's been a year since I last posted a message on my blog and it's been quite an adventure.
I've learned a lot along the way, ...I've had some successess and some failures and I'm glad for all that I have endured. I can honestly say that without experiencing some failure I would never fully appreciate the feeling of success.
So, here's to another year and for my courage to embrace the challenges of coming full circle to find myself again!

I'm Tread'n, Tapp'n, ...and hopefully Bike'n!

My reason for entering was simple ...
My daughter Karen is celebrating her 9th birthday this Saturday, on May 10th. We are buying her a bike for her birthday!
Not because all kids like bikes, but because she has never learned how to ride a bike without training wheels due to being over-weight and not being able to balance very well. She has been following the Suzanne Somers program called Somersize, I call her my "Somersizer in Training" and she has lost 11 lbs. since March.
I am so proud of her and want so much to encourage her to not only eat healthy but to incorporate exercise in her daily routine.

We had a Blast with SUZANNE™ !
My SUZANNE™ Open House was so much fun, ...it truly was a blast!
Here are some of my displays ...
I forgot to take photo's of the food display's in the kitchen, ..I had three mini crockpots and a beverage bar as well as some other desserts! And, I had two other areas of food product displays!
I really wish all of you could have been there, ...we really had a lot of fun.
I ended up having a ton of sales and some bookings and a few of my guests are interested in becoming Consultants! Yay!!! I'm so excited, ...I'm am ready to have a TEAM of my own and can't wait to pamper and spoil my girls with the SUZANNE™ products!
Kenny and I brainstormed and came up with the name "NeverEnding Somers" for my Team! I love it, ...what's better than the feeling of warm air, gentle breezes and the soft floral scents that envelope you on a Summer afteroon, it fills you with happiness and leaves you with the feeling of not wanting it to end! And, of course subsituting Summers with Somers is so fitting, ...Suzanne never ceases to amaze me on how her compassion and dedication to helping others to live healthy and beautiful lives comes through in all of her hand-picked products!
I have a few outside orders that I will get today, so if anyone else is interested in placing an order with me, you still have time! I'm closing out my party on Wednesday morning. Dreamy Coconut Squares
Dreamy Coconut Squares
(Makes 24 squares)
Crust Ingredients:
1 cup Vanilla Whey Powder
1/2 cup whey-low (sugar substitute)
6 tbl. butter (softened)
1 tsp. coconut extract
Procedure:
1.) Preheat oven to 350 degrees.
2.) Blend all ingredients together, press in bottom of 11x7 greased baking dish.
3.) Bake for 15 minutes, remove from oven and allow to cool for about 5 minutes while preparing filling.
Filling Ingredients:
8 oz. cream cheese (softened-room temperature)
1/2 cup sour cream
1 cup whey-low (sugar substitute)
3 eggs
1 tbl. lemon juice (fresh squeezed)
2 tsp. coconut extract
Procedure:
1.) Put all ingredients in a mixing bowl, stir to combine removing any lumps.
2.) Pour over cooled crust and return to 350 degree oven for about 35 minutes or until crust is golden brown and filling is set.
3.) Remove from oven, allow to cool completely.
4.) Once cooled, cover with plastic wrap and refrigerate over-night, then serve!
